This vegan, gluten free, Vitamin C packed side dish is also rich in K1, Folate, Vitamin A, Manganese and Calcium. Have it as a side dish alongside a protein source such as my Moroccan Lamb Burgers (see other recipes).
This recipe only takes 3 minutes to make and can be kept in an airtight container the fridge for up to a week.
- 1 jar of roasted and peeled peppers
- 1 tbs chopped fresh dill
- 1 tbs avocado or olive oil
- 1 close of garlic, peeled and crushed
- 1 tbs of apple cider vinegar
- salt and pepper to taste
Drain and chop the peppers and add the rest of the ingredients and mix well – voila!
