Cauli Rice with Kale

This easy vegan and gluten free side dish takes less than 8 minutes to make and is rich in Vitamin A, C, K, Calcium, Copper, fiber and antioxidants.

This recipe takes 8 minutes and makes 2 side dish portions.

Ingredients:

  • 1 tbs coconut oil melted
  • 2 x 150 grams raw frozen cauliflower rice bags
  • 30 grams of washed and chopped organic kale
  • salt and pepper to taste

Method:

Sautee the cauliflower in the coconut oil with the salt and pepper for 5 minutes then add the salt/pepper and kale and sauté for another 3 minutes. Enjoy with a squeeze of lemon on the side.
