This easy to make, vegan, gluten free and delicious side dish is rich in Vitamins A, C, B6, B5, E, Manganese and Potassium.
This recipe takes 10 minutes to prepare, 30 minutes to bake and it makes about 4 side dish portions.
Ingredients:
- 3 large organic sweet potatoes peeled and chopped
- 4 tbs coconut oil, melted
- salt and pepper to taste
- 1 tbs dried oregano
- 1tbs dried thyme
Method:
Toss the chopped and peeled sweet potatoes in an oven proof dish and add the melted coconut oil. Season with the herbs mixed in the salt and pepper and mix well. Bake for about 30 minutes at 170 degrees. Enjoy!
