These minty peas only take 10 minutes to make and are a delicious side dish option for lunch or dinner. Peas are rich in protein, vitamin A, Riboflavin, Niacin, Vitamin B6, Folate, Magnesium, Phosphorus and Copper.
This recipe makes 4 side dish servings and it takes 10 minutes to make.
Ingredients:
- 200 frozen peas
- 2 tablespoons coconut oil
- 1 onion chopped
- 1 crushed garlic clove
- 20 g fresh mint
- salt and pepper to taste
- a teaspoon of dried mint (for extra mintiness)
Method:
Sautee the onion on high heat in the coconut oil for 4-5 minutes and then add the garlic and the frozen peas ( or fresh ones if you are using) as well as salt and pepper to taste. Mix in the dried and chopped fresh mint and sauté for another 5 minutes, whilst mixing a few times.
