This vegan and GF recipe is easy and it contains plenty of Vitamins A, B6, C, Folate, Manganese and Potassium. I personally prefer new potatoes as much less starchy – also buy organic so you don’t have to peel.
This recipe takes 15 minutes to make and it yields 4 side dish portions.
- To make the pesto follow the carrot top pesto recipe
(can substitute the carrot tops for spinach, kale or basil)
- 200 grams new potatoes (organic) washed and chopped
- 4 organic spring onions, washed and chopped
- a handful of parsley, washed and chopped
Boil the new potatoes on the hob for 15 minutes and then add the rest of the ingredients – enjoy.
