Prebiotic Apple Stew

This recipe is rich in fiber, vitamin C and inulin – all foods good for beneficial gut bacteria hence the ‘prebiotic’ name.

This recipe takes 5 minutes to prepare and 15 minutes to cook.

This recipe makes 3 portions, you can combine the stewed apples as a topping on porridge, yogurt or eat on their own with a couple of nuts. You can keep in the in an airtight glass jar in the fridge for a few days.

Ingredients:

  • 2 large organic apples ( I used organic Braeburn)
  • 1/2 tablespoon cinnamon
  • 1 tablespoon Inulin Powder ( available online)
  • half a cup of filtered water
  • Optional: 3/4 drops of Stevia or 3 chopped prunes to further sweeten

Method:

Wash and chop the apples. Add with the rest of the ingredients and boil on the hob, then let it simmer for 12-15 minutes. Enjoy!
