This protein packed vegetarian quick breakfast is also rich in Inulin, fiber from the leeks, which is good for gut health. In addition, the mushrooms are also rich in B vitamins, Selenium and Potassium.
This recipe makes takes 15 minutes to make and makes 2 portions. You can add half and avocado or a couple of spoons of sauerkraut too!
Ingredients:
- 1 large leek chopped
- 1 tbs coconut oil
- 3 organic eggs
- 15 grams of feta or goats cheese crumbled
- Salt and pepper to taste
- 10 g of parsley to garnish
For the mushrooms:
- 100 grams shiitake Mushrooms
- 100 organic button mushrooms
- ½ tbs dried thyme
- Salt and pepper to taste
Method:
Sautee the leeks in the coconut oil with salt and pepper for 4 minutes and then add the beaten eggs with the crumbled feta. Mix and take off the heat in 4/5 minutes, garnish with parsley.
For the mushrooms, mix all the ingredients in the pan and sauté for 10 minutes, whilst stirring occasionally. Enjoy!
