Vegan GF Keto Granola

Enjoy this delicious GF vegan and keto granola with almond milk or coconut yogurt and a handful of berries such as blueberries or raspberries. This nutrient (selenium, manganese, zinc, oleic acid, vitamin E, B complex, magnesium, copper, Omega 3) and beneficial fats dense recipe is guaranteed to keep you full all morning.

This recipe only takes about 30 minutes to make, can be stored in an airtight container for up to a week. Makes 6 servings.


  • ½ cup pine nuts
  • 1 cup pecans (chopped)
  • 1 cup Brazil nuts (chopped)
  • ½ cup freshly ground flaxseed
  • ½ cup pumpkin seeds
  • 3 tablespoon cinnamon
  • ¼ cup coconut oil
  • 5 drops of Stevia (optional)


Soak the nuts overnight if possible (not essential). Place the pecans, Brazil nuts and pumpkin seeds in a bowl and mix with the coconut oil (with Stevia mixed in if using). Sprinkle the cinnamon and mix. Place the mixture on a baking tray and bake (140 degrees) for about 25-30 minutes, whilst mixing regularly. Add the pine nuts and flaxseeds only 2/3 minutes before you take out of the over ( as these oxidise quickly). Keep in airtight glass container and enjoy with nut milk, coconut yogurt and topped with berries.
